RESEARCH INTERESTs
Thomas Roberts' research concerns a variety of plant proteins and small molecules, their properties, roles in the plant, and functionality in foods. He has had a long-term interest in the evolution, biochemical properties and functions of the serpin family of proteins in plants. He currently works on the chemistry, biochemistry and food applications of tritordeum grain; the interactions between proteases and protease inhibitors in the barley/barley leaf rust pathosystem, the properties of Australian native grains in relation to plant growth environment, the utilisation of triticale malt in brewing, and the effects of plant heat stress on the molecular responses and quality of wheat grain. Roberts' research involves a broad range of techniques in plant physiology, cell biology, molecular biology, protein biochemistry and food chemistry.
