RESEARCH INTERESTs

Kim's research interests include microbial food safety, quality differentiation, and product/process development.

Since joining the University of Sydney in 2013, she has worked on:

  • Microbial food safety in melons, leafy green vegetables, apples, and sprouts
  • Development of value-added products from tomato crop residues, peanut and pecan waste streams
  • Digestive tract microbiome of abalone in Australian aquaculture
  • Quality and perceptions of chocolate from different geographic origins

She has also supervised many undergraduate projects on various, diverse food-related topics.

Kim's research aligns with the Faculty of Science Research Strengths - Cultivating Scientific Capability, Future Foods.
